NIGERIA EGUSI SOUP DELTA STYLE WITH EBA

Hello everyone😊

Today i will be sharing my delicious egusi soup recipe also known as melon soup.

Egusi soup is made from melon seed which is very rich in protein and oil.

This soup is very popular in Nigeria,eaten by different tribe and prepared in different ways.

Over the years i have made this soup in different ways and it always comes out great.


I can remember back then in secondary school,when i made this soup for my food and nutrition practical and it was a great honour to have our commandant have a taste of it and he was really impressed😆

By the way i went to a military school,Nigeria Navy Secondary School Porthacourt.

Commandant is like the principal of the school.

Then the coordinator came and cleared my pot,thank God i hide some before,thats how i wouldn't have had a taste of what i prepared😮

The gist has ended😆

Back to the businesss of the day,this method was made with tomatoes and a lot of onions,which made the soup so delicious😋

This is my best method at the moment till i discover a better one😉

The family loved it,it was their first time of trying this type and they have been on my neck to make it again😂😂😂



INGREDIENTS
-Beef(cut to your desire size)

-Stock fish

-1 cup of melon

-2 cooking spoon tomatoes and pepper blend

-4 onion(chop 2 balls and leave 2 to blend with the melon.

-1/2 cooking spoon of blended crayfish

-2 cooking spoon of Palm oil

-1 ball bitter leaves(wash and chopped)

-A small bunch of ugu(pumpkin) or spinach leaves(washed and chopped)

-Seasoning cubes( I used the new naija maggi seasoning cubes,it's very good for soups and takes it to a whole new level😉

-Salt to taste.

PREPARATION

-Wash the beef and stock fish thoroughly to remove dirts,place in a pot,add water enough to boil it.

-Add some sliced onion,seasoning cubes,salt and bring to a boil.

-While that is boiling,wash the melon and two balls of onion,put in the blender add water blend till smooth.

-Pour in a pot and bring to a boil till the water dried up,this will remove the raw taste from the melon.

-Get a dried pot add palm oil bleach till it's translucent.

-Add some slice of onion,fry till tender then add the tomatoes and pepper blend,fry till it's well cooked and the oil floats to the top.

-Then add the melon blend and cook for 5 minutes,add the crayfish and the meat stock stir together,if it's still too thick add some water till you get the consistency you want,then add the meat and stock fish,stir together.

-Taste for salt and seasoning cubes,add more if necessary.

-At this point add the bitter leaves,stir together and cook for two minutes then add the ugu or spinach leaves,cook for another two minutes.

-Your soup is ready,serve with any swallow of your choice.

NIGERIA EGG ROLL

Egg roll is a Nigeria street snack usually sold in traffic by hawkers or on the road side accompanied with other snacks such as burns and puff puff.

As the name implies,egg roll is made with boiled egg and dough.The dough is wrapped round the egg and deep fried.

I love egg roll but it's been a long time i had one,the last time i bought it was all dough with half egg😒

Yes you heard me,half egg.

Who does that?I was so angry and stopped buying for a while.

So last week i had a serious craving for it but wanted to make it myself,i have never given it a try before,this was my first attempt and it came out great😊

It was so delicious,my sister and mum wanted more.

If you follow these simple steps,you will get it right.





INGREDIENTS
-1 cup flour(not the normal measurement cup,it's a bit bigger)

-5 hard boiled eggs

-1 beaten egg

-1 tsp baking powder

-1/2 salt

-3 tbsp sugar

-1 tbsp nutmeg

-3 tbsp margarine or butter

-Water

-Oil for frying


PREPARATION

-Sieve flour in a bowl,add the sugar,salt,baking powder,nutmeg mix together.

-Add the margarine or butter work into it with the tip of your hand till it becomes crumbly.

-Add the beaten egg and mix with your hands,at this stage it will look dry.

-Start adding the water bit by bit till you get a not too sticky dough,work the dough for a minute,cover and let it rest for 15 minute

-Work the dough again,cut into 5 part and gently wrap round the eggs.

-Deep fry on medium heat till it is golden brown.

-Make sure the oil is hot enough before frying,immediately you start frying reduce to medium heat so the inside can cook properly.

-Once it's ready remove from the oil and drain on a paper towel.

YAM BALLS WITH CHICKEN STEW


Hello everyone

I know it's been a while i posted here,i'm so sorry it's not intentional.

I have a lot going on in my business so it's been taking alot of my time and also i am working on the blog to make it professional and attractive so you all can take me seriously 😂😂😂

Today's recipe is this amazing yam balls i made last week with my own twist,it's so delicious,crunchy outside and soft inside😋

I made it for a recipe contest and i won😆
The feeling is so amazing,actually getting something free for doing what you love.

I won a pressure cooker😊i have always wanted one and was even planning on buying.

This recipe is very easy to make and the ingredients can be gotten from any local market around you or a super market.

So let's get cooking.......


INGREDIENTS
-Yam

-1 ball of onion chopped

- 2 Red pepper chopped

-1/2 Green bell pepper chopped

-1/2 cabbage chopped(optional)

-1 Egg

-1 tbsp suya spice(optional)

-1 seasoning cubes

-1 tsp curry powder

 -Salt to taste

-Vegetables oil for deep frying.

 - Bread crumbs or cornflakes(I used cornflakes,crush before using)

Bread crumb is easy to make,place bread in the oven or hot pan,allow to get very dried,remove and blend with a dry blender.


Note-the ingredients i used is for two serving,increase for more.

PREPARATION

 -Peel the yam,cut into small chunks,rinse,add to a pot,add enough water,salt to taste,bring to boil till soft.

-while you are waiting on the yam to boil separate the egg yolk from white,place in separate bowls.

-check the yam,once is ready drain the water,place in a bowl,add the egg yolk,chopped veggies,curry,seasoning cubes ,suya spice and salt.mix all together with clean hands till it's well mix.

-mold with your hands into a round ball,mix in egg white then coat with the bread crumbs or cornflakes.

-place a pan with oil on high heat,drop the yam balls into the hot oil carefully,reduce to low heat fry till golden brown,place in a kitchen towel to drain.

Serve alone as a snack or with sauce or stew.

CHICKEN AND CHIPS

Hi food lovers

It's another new week with an exiting recipe.

Chicken and chips is on the menu today,yayyyy😆

My favourite meal any time any day,this meal gives me so much joy as simple as it is.

I know this is a starter for alot of people but it's a main meal for me.

So last week i made this chicken and chips for the family and it was so delicious,better than what I buy from eateries.

My sister even finished hers before I was done preparing😂😂😂she ended up eating her chips with fried eggs and was begging everyone for a taste of their chicken.

This shows how delicious the meal was

To make this easy dish,you will be needing....



INGREDIENTS
-Soft chicken(as much as you want)
-Irish potatoes(as much as you want)
-1/2 All purpose flour
-1 tbsp Suya spice
-1 tbsp curry powder
-1 tbsp ginger powder
-1 tbsp garlic powder
-1 tbsp thyme
-1 tbsp cameron pepper
-1 tbsp nutmeg powder
-1 onion(for marinating)
-Seasoning cubes
-Salt
-honey(for marinating)
-vegetable oil for deep frying.

PREPARATION
-Wash chicken Very well.

-marinate the chicken for 2 hours or over night,over night is better so the chicken can be tender and absolve all the flavours.

-Get a bowl,mix the flour with suya spice,curry,thyme,ginger,garlic,nutmeg,Cameron pepper seasoning cubes and salt,set aside.

-Get another bowl,break an egg,add a pinch of salt and set aside.

-Get a piece of chicken deep in the egg then cover with the flour mixture,do this till you are done with all the chicken.

-Heat up a dried pan,add enough oil to deep fry,allow it to be very hot then start frying the chicken.

-Reduce the fire to the lowest so it can cook gradually,remember you are actually cooking the chicken so if the fire is too high,the outside will cook quickly and the inside will be uncooked.

-If a fork pass through the chicken easily,then it is ready.

Note-marinating is to season chicken,beef or fish,with different spices,onion,seasoning cubes,salt,oil and honey,cover then place in the fridge to stay for 2 hours or over night.Over night is better so it can absorb all the flavours.

The honey is optional,I just love sweet and spicy chicken.


FOR THE CHIPS
-Wash the potatoes
-peel
-Cut with a chips chopper or a knife
-Drain with a filter
-Salt and deep fry till it's crispy.
-Your chips is ready.

Pair with the chicken,ketchup or sauce and enjoy.

UKODO(YAM AND PLANTAIN PEPPER SOUP)

Ukodo is a yam and unripe plantain pepper soup dish of the Urhobo people from the Delta region of Nigeria,it is mostly served at occasions as a special delicacy.



As a correct Delta girl,I love this dish alot.During the festive season we bought two goats,after sharing and entertaining guest some where still remaining in the freezer.

So when the opportunity of participating in a cooking competition came I decided to prepare ukodo with the remaining goat meat,it was an online competition i am still waiting for results,please add me in your prayers so i can win,the cash prize is huge.




This dish is mouth watering and very delicious if prepared well.people are already used to the normal yam and pepper soup but alot don't know the combination of both,this takes yam and pepper soup to another level.


INGREDIENTS
-Goat meat
-Yam(peel,wash and cut in cubes)
-Unripe plantain(peel,wash and cut in cubes)
-Red pepper(blended)/blended dried pepper can also be used.
-Onion(chopped)
-Erhe(calabash nutmeg/urheri(grain of selim)blend small quantity or already made pepper soup.
-Lemon grass(washed)
-Scent leaves(washed)
-Potash(a little)
-Seasoning cubes
-Salt



Spices and how they are used
-Erhe(calabash nutmeg)consist of the skin and seed,part used the seed.

-Urheri(grain of selim)consist of the seed and skin,part used both.

PREPARATION
-Wash and cut the goat meat to smaller sizes.

-Boil with lemon grass,scent leaves,onion,seasoning cubes and salt till it's soft.

-Add pepper,pepper soup spices,plantain and yam cubes cover to boil,when it's almost ready add little potash,taste for salt and seasoning cubes,add again if necessary.

-Remove the lemon grass from the soup.

-To thicken the soup a bit,take out a piece of yam mash then add it to the soup,leave for two minutes.

-Your ukodo is ready.

CHICKEN AND NOODLES PEPPER SOUP

Hello every one

On the menu today is chicken and noodles soup,I'm really not a big fan of noodles but i eat any way but not the usual way a lot of people prepare theirs,i prepare mine in so many different ways.

So last week i had this serious cramp from my monthly flow,it was very painful and frustrating,I was restless,took all the drugs I could but that didn't help.

I couldn't take tea cause that may increase the pain so I remember a post i saw on Matse cook instagram page where she shared noodles soup,I decided to make for my self if the pain could stop and surprisingly it did.

So here you have it................



INGREDIENTS
-Chicken(wash and cut in small sizes)
-2 small pack of indomie noodles
-2 carrots(chopped)
-2 red pepper
-1 small onion
-scent leaves
-Pepper soup spice
-Seasoning cubes
-Salt

PREPARATION
-Boil the chicken with salt and seasoning cubes.
-Roughly blend the pepper,onion and scent leaves,add to the chicken.
-Add the pepper soup spice,cook till it's soft then add the chopped carrot,leave for 2 minutes,add the noodles and cook till it's ready.

I don't like very soft noodles,so I don't cook for long.
This is the first time i'm making noodles this way and It was so delicious.

YAM PORRIDGE

Hi everyone

On our menu today is yam porridge,i know its not new to you all but this particular recipe is different from what you all are used to.I love my porridge thick and not watery,in other to achieve that you have to chop some of the yam into smaller cubes so it will be easy to mash a bit but if you refer yours watery then skip this part.

Yam porridge is a very quick meal to make in less than an hour and very tasty too.
Let's get cooking.........




INGREDIENTS
-Yam
-1 Smoked or fresh marckcrel fish
-Crayfish
-1/2 green bell pepper
-3 red pepper
-2 fresh tomatoes
-1 onion
-A cooking spoon of Palm oil
-Ugu leaves
-2 seasoning cubes(i used the new naija pot maggie cubes,it gives the porridge a nice taste but any seasoning cube is fine)
-Salt to taste.

Note-this quantity was for 3 serving,you can increase for more people.



PREPARATION
-wash and roughly blend the tomatoes,pepper,onion,green pepper,crayfish and set aside.

-Wash the ugu leaves with water and salt to remove dirts and finely chop in shreds.

-Peel the yam,chop in small cubes,wash and place in a pot,add water enough to cover the yam bring to a boil,add salt,seasoning cubes,Palm oil and tomatoes blend,cook for 5minutes then add the smoked or fresh marckcrel fish.cook till its ready,then add the ugu leaves,let it simmer for 2 minute.

-Your delicious yam porridge is ready.
