NIGERIA EGG ROLL

Egg roll is a Nigeria street snack usually sold in traffic by hawkers or on the road side accompanied with other snacks such as burns and puff puff.

As the name implies,egg roll is made with boiled egg and dough.The dough is wrapped round the egg and deep fried.

I love egg roll but it's been a long time i had one,the last time i bought it was all dough with half egg😒

Yes you heard me,half egg.

Who does that?I was so angry and stopped buying for a while.

So last week i had a serious craving for it but wanted to make it myself,i have never given it a try before,this was my first attempt and it came out great😊

It was so delicious,my sister and mum wanted more.

If you follow these simple steps,you will get it right.





INGREDIENTS
-1 cup flour(not the normal measurement cup,it's a bit bigger)

-5 hard boiled eggs

-1 beaten egg

-1 tsp baking powder

-1/2 salt

-3 tbsp sugar

-1 tbsp nutmeg

-3 tbsp margarine or butter

-Water

-Oil for frying


PREPARATION

-Sieve flour in a bowl,add the sugar,salt,baking powder,nutmeg mix together.

-Add the margarine or butter work into it with the tip of your hand till it becomes crumbly.

-Add the beaten egg and mix with your hands,at this stage it will look dry.

-Start adding the water bit by bit till you get a not too sticky dough,work the dough for a minute,cover and let it rest for 15 minute

-Work the dough again,cut into 5 part and gently wrap round the eggs.

-Deep fry on medium heat till it is golden brown.

-Make sure the oil is hot enough before frying,immediately you start frying reduce to medium heat so the inside can cook properly.

-Once it's ready remove from the oil and drain on a paper towel.

YAM BALLS WITH CHICKEN STEW


Hello everyone

I know it's been a while i posted here,i'm so sorry it's not intentional.

I have a lot going on in my business so it's been taking alot of my time and also i am working on the blog to make it professional and attractive so you all can take me seriously 😂😂😂

Today's recipe is this amazing yam balls i made last week with my own twist,it's so delicious,crunchy outside and soft inside😋

I made it for a recipe contest and i won😆
The feeling is so amazing,actually getting something free for doing what you love.

I won a pressure cooker😊i have always wanted one and was even planning on buying.

This recipe is very easy to make and the ingredients can be gotten from any local market around you or a super market.

So let's get cooking.......


INGREDIENTS
-Yam

-1 ball of onion chopped

- 2 Red pepper chopped

-1/2 Green bell pepper chopped

-1/2 cabbage chopped(optional)

-1 Egg

-1 tbsp suya spice(optional)

-1 seasoning cubes

-1 tsp curry powder

 -Salt to taste

-Vegetables oil for deep frying.

 - Bread crumbs or cornflakes(I used cornflakes,crush before using)

Bread crumb is easy to make,place bread in the oven or hot pan,allow to get very dried,remove and blend with a dry blender.


Note-the ingredients i used is for two serving,increase for more.

PREPARATION

 -Peel the yam,cut into small chunks,rinse,add to a pot,add enough water,salt to taste,bring to boil till soft.

-while you are waiting on the yam to boil separate the egg yolk from white,place in separate bowls.

-check the yam,once is ready drain the water,place in a bowl,add the egg yolk,chopped veggies,curry,seasoning cubes ,suya spice and salt.mix all together with clean hands till it's well mix.

-mold with your hands into a round ball,mix in egg white then coat with the bread crumbs or cornflakes.

-place a pan with oil on high heat,drop the yam balls into the hot oil carefully,reduce to low heat fry till golden brown,place in a kitchen towel to drain.

Serve alone as a snack or with sauce or stew.
