SHORT BREAD BISCUITS

Hi food lover😊

Complement of the season,how's your week going?I know it's been a while I posted here,i am really sorry, it has been a busy year and this few month haven't been easy,trying to balance work and blogging is no joke😟

I have been busy with business and I thank God for sales.Next year will be a lot better with lots of easy and healthy recipes,i will also introduce a weight loss programme to help us get that banging body ready for next year.

Ok let's get to the business of the day,some months back I tried out this really delicious short bread recipe and it came out great,just like the type we buy.when it comes to baking I really don't have much experience,so if i can make this biscuit then any one can😆It's just a 3 to 4 ingredient recipe.





INGREDIENTS
-1 cup of all purpose flour
-125g margarine/butter(I used simas margarine)
-half cup sugar or to your taste
-milk(optional)


PREPARATION
-Beat butter and sugar together untill soft and smooth
-sieve and stir in the flour and milk  to get a smooth paste.
-Place in a working surface,roll out with a rolling pin
-Cut in different shapes,round etc,place in a baking train and chill in the fridge for 20 minute
-Bake in the oven for 15 to 20 minute or until ready,set aside to cool.



Your biscuit is ready to enjoy😆easy right?

BANGA(PALM FRUIT)RICE

Hi foodies😊

How have your week been?mine has been a bit stressful because I have a lot of things I'm doing at the same time.

I'm also an enterprenur,I make ladies headwears and bridal accessories,you can check my business page on instagram and facebook @woma_artistry.I try to balance both.I will be participating in a fashion show by the month end so I'm trying to put things in place.


ok lets get back to today's menu,I will be sharing a very simple and delicious rice recipe from Nigeria,precisly from the Niger Delta region called banga(palm fruit)rice,I know it's not new to a lot of you but i know some people haven't heard of or eaten it.


It's prepared same way banga soup is made,the only difference is the addition of rice.check the blog for my banga soup recipe.
Let's cook☺


INGREDIENTS 
-3 cups of banga(palm fruit) or tinned banga(palm fruit)concentrate.

-Note-the banga should be more than the rice.

-2 cups of rice

-scotch bonnet(red pepper)chopped or blended.

-onion(chopped or blend)

-smoked or dried fish

-crayfish(blended)

-ataiko

-iruguje



PREPARATION 
-wash and boil the palm fruit till soften then pound in a mortar or bowl with a pestle till the skin separates from the nuts,add warm water and extract the juice into a pot with a sieve.

-Repeat the process two more times to ensure you extract all the juice.

-If you are using store bought tinned banga(palm fruit)concentrate,loosen with warm water a bit before boiling.

-boil for 30 minute,while that is going on,wash the dried or smoked fish with warm water and salt to remove dirts.

-wash and parboil the rice and set aside.

-Then add the ataiko,iruguje,pepper,onion and crayfish to the pot of banga extract and cook for 5 minute.

-Add seasoning cubes and salt then the parboiled rice.you can add the fish at this stage or wait till the rice is almost ready so the fish doesn't scatter.

-Cook till the water dries off.

Your bangs rice is ready😊

SPICY PLANTAIN CHIPS

Plantain chips is a Nigerian crunchy snack made with ripe or unripe plantain.This snack is very popular in Nigeria,it is mostly sold by hawkers in traffic.

I love this snack alot exactly with unripe plantain,it's been ages I had it so I decided to make mine in a special way,because normal is boring to me,i add a little twist to mine.


INGREDIENTS 
-4 or more unripe/ripe plantain
-vegetable oil for frying
-Grounded dried pepper
-Ginger(grounded)
-Salt

PREPARATION 
-wash and peel the plantain
-slice with a knife or plantain slicer to your desire shape into a bowl of water to prevent it from changing colour.
-seive the plantain to drain water from it.
-place in a bowl,add the pepper,ginger and salt.
-Mix all together properly.
-heat up a pan,add enough oil and let it get hot then start frying the plantain till it gets hard and yellow in colour.
-place the chips in a pepper towl to absorb the oil and cool completely.
-Consume immediately or store in an air tight container to snack on later.

MY ADAPTATION OF GHANAIAN TOMATO PEPPER SOUP

When I was very young I could remember eating this soup all the time,it was my favourite then,expecially with chicken😆my mum made us love it,always taste amazing😋it's the first soup i learnt how to prepare,i learnt it from my mum who also learnt from an uncle whose mum is a ghanian and father Nigerian,i made a little twist in my preparation.it's more like egusi(melon)pepper soup,the only difference is the addition of tomatoes.





INGREDIENTS 
-Chicken,beef or fish
-3 Tomatoes
-5 or more Stoch bonnet(fresh pepper)
2 onion(one for the chicken the other for the soup)
-1 cooking spoon of melon(egusi)
-1 tbsp pepper soup spice
-Seasoning cubes
-Salt to taste.

PREPARATION 
-Start by cooking the chicken or beef with onion,seasoning cubes and salt till it's tender.
-In a blender add the tomatoes,fresh pepper,onion,melon and water,blend till it's very smooth.
-Add the blended paste to the pot of chicken or beef,cover and leave to cook very well,if it's not well cooked the melon will taste raw.
-when it's well cooked add the fish if you are using.
-Add pepper soup spice.
-Add seasoning cubes
-Add salt to eat.

Your soup is ready,eat with eba or pounded yam.Trust me you will love it.

FRIED BEANS WITH DODO(PLANTAIN)


Beans is one of my favourite meal,I always cook mine differently tho.I started making this meal when i was in primary school,i can remember the first time i ever made beans😩it was terrible,half cooked😂😂😂and I was feeling so fly😆my mum was just laughing,in her mind this one is feeling like a super star😅😅

With time I became a pro,and i have made different twist to it and it always comes out great😆till date my mum prefers my beans to hers,according to her mine taste better even my friends can testify to that😉my head is swelling oh lol.If you don't like beans try mine and you will have a rethink.



I love the fry method,this is the only type I eat,some people prefer the other method you cook the beans add oil and every other ingredients😭please how do you eat that?I rather drink water if that's the only option I have.

I have tried different types of beans
-Black eye bean
-Butter bean(lima bean)
-Brown bean
-Honey bean

Honey bean is my favourite right now,till i discover a better one,it has this sweet taste even without adding any ingredients to it.if you are yet to try this out then you should and you will never eat any type again.

Enough of my story let get down to business,if you follow these steps,you will get it right.

INGREDIENTS 
-2 or more cups of honey or any other beans

-5 or more tomatoes

-5 or more scotch bonnet(red pepper)

-2 onions

-1 cooking spoon of crayfish(grounded and whole)

-1 smoked fish(debone)(optional)

-2 cup red oil

-pumpkin leaves(ugu)washed and chopped

-seasoning cubes

-salt

PREPARATION 
-pick and wash beans very well

- boil the beans with enough water and chopped onions,leave some of the chopped onions for frying.

-blend the tomatoes,pepper and onion to a paste.

-When the beans is soft and almost ready add salt,the crayfish,it can be blended or whole,at this stage you can add fish if you are using,add the pumpkin leaves,cover till the water dries off,set aside.

Heat up a clean dry pan,add the Palm oil,allow it to heat a little.

-Add the remaining chopped onions,fry till tender.

-Add the tomatoes paste,fry till its well cooked and the oil comes ontop,just like you fry stew.

-Add some seasoning cubes,add little salt to it if it's not enough,

-cook for 2 minute,when it's ready pour it into the pot of beans or vise versa and stir making sure it covers completely,cover and cook for another 2 minute.
Your fried beans is ready😋



Fry the plantain and enjoy
You can also enjoy it with pap,oat,garri,or bread.

FLUFFY BANANA PANCAKES

Pancake is a great breakfast option,it is filling and delicious,over the years have been opportuned to try different pancake recipes and they always comes out great.



Different countries have their own version,we in Nigeria have our own too,check the blog for my Nigeria pancake recipe.

There are different methods of making pancakes,either light or fluffy,the difference between the two is the addition of baking powder,baking powder makes pancake fluffy and soft.

But today's recipe is an healthier option made with the addition of bananas.if you don't like pancakes,you will definitely love this one.



INGREDIENTS 
-1 cup flour

-4 ripe bananas

-2 tablespoon white sugar

- liquid milk or powdered

-1 teaspoon baking powder

-1 teaspoon cinnamon(optional)

-1 egg

PREPARATION 
-seive flour in a bowl,add the sugar,baking powder and cinnamon.

-In another bowl mash the bananas,add the milk and eggs.

-combine the flour mixture with the banana mixture,the batter becomes thick and lumpy.

-Get a pan add little oil,heat it a ittle then scoop with a cooking spoon and pour into the pan.

-cook  one side till it's golden brown then flip the other side and do the same

-Repeat the process for the remaining batter

-served topped with bananas,honey or maple syrup and enjoy😆

MACKEREL PALM OIL STEW

I finally satisfied my craving😊yayyyy,i have been dreaming of this stew for a while now but kept procasinating😩I really need to work on this.For over a month plus now chicken has been the only protein i add to all my meals,from soup to stew and sauce I'm tired and will not kill myself with it.I need to give fish a chance too in my food journey😂😂😂😂😂
Sit back relax and let get cooking........


INGREDIENTS 
-1 mackerel cut,remove the intestine and wash clean.
7 or more tomatoes(blended)
-5 or more scotch bonnet(blend)I love alot of pepper in my palm oil stew.
-2 onion balls(blend 1 and chop the other for frying)
-2 cooking spoons of Palm oil
-seasoning cubes
-salt

PREPARATION 
-pour the blended tomatoes,pepper and onion in a pot,heat till the water dries up and turns to a puree.
-Boil the fish with little water and salt,for 10 minute.
-Pour the red oil in a pot,heat till it bleaches a bit,then add the chopped onion fry till tender.
-Then add the tomatoes puree stir and cook till it's well fried,I love my stew well fried.
-Add the fish stock,seasoning cubes and salt stir and cover to cook for 10 minute then add the fish,stir carefully and cook for another 5 minute.
Your mackerel palm oil stew is ready
Serve with rice,beans,yam,plantain or potatoes.

ONION CHICKEN SAUCE WITH PLANTAIN

Hi food lovers😊

I made a simple and delicious sauce recipe I will be sharing,this can serve as breakfast or dinner,eaten with rice,yam,plantain or bread.If you don't like onion,then this dish isn't for you😛cause the major ingredients here is onions and a lot of it but if you love onion like me then let's get cooking.............



INGREDIENTS
-3 onion balls or more(chop some and blend some)
-2 or more scotch bonnet(red pepper)chopped
-2 tomatoes chopped(optional)
-Soft chicken(cut in small pieces)
-vegetable oil for frying
-1 garlic clove
- ginger
-1/2 tsp nutmeg
-1/2 tsp turmeric
-1 tsp curry powder
-1 tsp thyme
-Seasoning cubes
-Salt


PREPARATION 
-marinate chicken for 30 minute with onion,garlic,ginger,nutmeg,tumeric,curry,thyme,seasoning cubes and salt before cooking or just cook immediately.
-when it's ready,get a pan add little vegetable oil,heat oil then add onion and fry till tender,add the pepper,tomatoes if you are using,fry till it's well cooked,then add the chicken with the stock stir and cook for 2 minutes.
-Your sauce is ready.
Easy and yummy😋

Note-this quantity was for 2 serving,it can be increased for more serving.

PUFF PUFF

Puff puff is a deep fry soft fluffy Nigeria snack,it is very easy to make and delicious😋can serve as breakfast with a drink,tea,coffee or hot chocolate.



INGREDIENTS 
-2 cups flour

-1/2 cup sugar or as you want

-A tin of liquid or powdered milk(optional)

-1 tsp nutmeg(optional)

-1 tbsp yeast

-lukewarm water

-vegetable oil for drying

NOTE-Increase the quantity of ingredients if you want more puff puff,this made more than 20 puff puff.


PREPARATION 
-Mix the yeast in a bowl with water and set aside for 5 minute.

-sieve the flour in a bowl,add sugar,nutmeg mix all together.

-Add the yeast to the mixture,liquid milk and little warm water,mix thoroughly till the batter becomes smooth and not too watery.

-cover with a clean cloth or foil to rise for an hour.

-After an hour the batter would have doubled in size.

-Heat up enough oil in a deep pan for deep frying.
note-if the pan isn't deep enough,you will end up with flat puff puff😂😂

-To check if the oil is hot enough drop a little batter in the oil,if it rises to the top,then it's ready.

-Use your hand to scoop the batter into the oil,fry till brown and transfer into a sieve with paper towel to absorb the oil.

-Your yummy puff puff is ready😋

BANGA(PALM FRUIT)SOUP(DELTA STYLE)


Bangs soup is from the Niger Delta region of Nigeria,it is best cooked with fresh or dried fish,meat or chicken can be used and best eaten with starch.Traditionally it's served and steam in a native earthen pot which gives the soup a special taste.

As a correct Delta girl,I can prepare this soup with my eyes closed😁
Let me show you how it's done.........

INGREDIENTS 

-Banga(palm fruits)as much as you want

-Dried or fresh fish,chicken or meat(I used dried fish)

-Scotch bonnet(red pepper)as much as you want(blended)

-1/2 cooking spoon crayfish(blended)

-1/2 tsp ataiko(blended)

-1 tsp iruguje(blended)

-1tbsp beletete

-1 tsp dried crushed bitter leaves

-Seasoning cubes

-Salt

  NOTE-tsp is teaspoon
                 -tbsp is tablespoon
          
                     BANGA SOUP SPICES

The spices can be found in your local market from people that sells spices.

PREPARATION

-Add the fish and cook for another 10minute

-Then add the beletete,dried bitter leaves,seasoning cubes and salt cover and cook till the soup thickens a bit.

Serve with starch,eba or any swallow of your choice
Banga soup is best eaten with starch.
This can serve as lunch.

NIGERIAN PANCAKE WITH HONEY

Hi food lovers

Let me tell you all a little story of how my love for pancakes came about,I once stayed with a big mummy when I was in Jss1,she is the owner of Twin Fountain Group of Schools Warri and i attended the school before i had a transfer to Nigerian Navy Secondary School Porthacourt.

During my stay breakfast was a compulsory meal,even if you don't feel like eating you must take it with you to school,I and my cousin had to wake up very early because her daughter Ozoz(kitchen butterfly)always drop us at school before going to work.

She loves making snacks and breakfast,especially pancakes and puff puff.Every morning she makes a big bowl of pancake and puff puff batter,all we had to do was fry and eat with our favourite drink.we sometimes take for our friends to school because it's always too much for us to finish,this became a daily routine,unconsciously I learnt how to make pancakes like a pro lol



So guys my childhood has always been surrounded with good food lol
Let's cook


INGREDIENTS 
-2 or more cups of flour
-3 eggs
-butter/margarine(melted)
-1/2 cup granulated sugar
-1 liquid milk or powdered milk 
-1 onion(chopped)
-2 or more scotch bonnet(red pepper)(chopped)
-1/2 tsp salt
-1 tsp cinnamon(optional)
1/2 water
-vegetable oil to fry

PREPARATION 
-Sieve the flour in a bowl,add the sugar,salt,cinnamon mix all together.
-Add the milk to the melted butter,add the eggs,chopped onion and pepper mix all together.
-Gradually add the flour and whisk till the mixture begin to thicken and look lumpy
-Then add water untill the batter is smooth and light.
-Get a pan add little oil just to grase the pan,heat it a ittle then scoop with a cooking spoon and pour into the pan.
-cook  one side till it's golden brown then flip the other side and do the same
-Repeat the process for the remaining batter
-Serve and enjoy with tea,coffee or hot chocolate.

CINNAMON STIR FRY RICE

Hi foodies

I will be sharing a quick and easy rice recipe I tried out yesturday,I 'm really not a rice person and it gets tiring eating one particular rice all the time.Rice and stew is an everyday meal in my house,jollof and fried rice we eat once in a while,which has been our routine for years now.At a point I stopped eating rice for a long time.

I love trying out new recipes,so i decided to make rice with one of my favourite spice "CINNAMON"which i use for must of my meals.it adds savory to a dish and has alot of health benefits,I even add it to tea and coffee and it taste amazing.There is a thousand rice recipe we could try out but we in Africa,especially Nigerians like sticking to the regular we've known for years now.

We don't have to choke ourselves with what we grew up with,this dish is tasty and easy to prepare in minutes.I present to you my CINNAMON STIR FRIED RICE let get cooking. ...........







INGREDIENTS 
-Rice
-Cabbage(chopped)
-Green pepper(chopped)
-Scotch bonnet(red pepper)
-Onion(chopped)
-chicken,meat or fish stock if you are using any.
-vegetable oil
-2 tsp cinnamon
-seasoning cubes
-salt

PREPARATION 
-wash the rice,pour in a pot,add water then parboil for 10 minute.
-wash again,add the stock if you are using any,add little water and a tsp of cinnamon or just add water,salt and 1 tsp of cinnamon.
-leave it to cook till it is ready.
-Get a pan,add little vegetable oil,add the veggies starting with the onion,green pepper,red pepper and cabbage.
-stir and leave for 2 minute,add another tsp of cinnamon,seasoning cubes and salt,stir and leave for a minute.
-Then add the rice to the veggies,mix together and leave for another 2 minute.
Your cinnamon stir fried rice is ready serve with any protein of your choice.(chicken,meat,fish or egg)

ASUN(SPICY SMOKED GOAT MEAT)WITH DODO(PLANTAIN)

Happy new week foodies

I hope you all had a wonderful weekend?
Today I will be sharing a delicious,mouth watering and easy recipe.A Yoruba delicacy called asun(spicy smoked goat meat).

The first time I ate it was during my visit to Lagos,a friend took me to "The place restaurant Lagos"i ordered yam,eggs and asun,I didn't even know what it was but wanted a taste of it.I tried it and fell in love with it.

After that day,whenever I go out to eat,I always ordered  asun till I left lagos.Back home I couldn't get it and i have been craving for it,so I decided to make it myself for the family last weekend and they loved it.my mum have been disturbing me since to make it again lol

INGREDIENTS 
-Goat meat
-scotch bonnet(red pepper)
-Onion
-Green pepper(optional)
-vegetable oil
-Seasoning cubes
-Salt

PREPARATION 
-wash the goat meat and cut into small pieces
-marinate goat meat for about an hour or over night,I did mine over night.
To marinate is by adding seasoning cubes,salt and onion to the goat meat in a bowl,cover and place in the fridge.This will add flavour to the goat meat and also make it tender.
-After that boil the goat meat for 20 minute or more till it is half cooked then transfer into the oven,grill till it is ready.Traditional asun is made outside in an open grill like the type those selling suya use.what is important is the Smokey taste and oven can achieve that.
-chop or roughly blend the pepper and onion.
-Get a pan,add little vegetable oil and heat a bit,add the onion,pepper,green pepper and stir fry for two minute then add the smoked goat meat stir all together and fry for another 2 minute.

Your delicious asun is ready

PAN AKARA(BEAN CAKE)AND HOME MADE GUINEA CORN PAP

Good day food lover😊

I guess your week is going fine.Over the weekend I won a giveway from Kenyen farm's warrI yayyy😊 I litre of pure honey and 1kg of ijebu garri,neatly processed and packed.I was so exicted about the honey because it's pure,natural and undiluted.






This morning I made akara(bean cake)and pap for the family.The pap is home made,made by mum with my assistance.Akara is so easy to make,gone are the days when one has to soak beans for hours, peel off the skin and blend before making akara or moi moi but now all you need is bean flour,just pick your beans,blend dry and store in a dry container.With this method you can make akara and moi moi any time of the day.I always add a twist to mine,i   shallow fry instead of deep fry,this method is healthier.so let get cooking......

INGREDIENTS 
-Bean flour
-Onion chopped
-Scotch bonnet(red pepper) chopped or blended dry pepper
-Green pepper chopped (optional)i always use it because it gives it a nice flavour
-Crayfish blended
-Nutmeg (optional)
-Seasoning cubes(maggi or knorr) salt and of course water.

PREPARATION 
-Mix the flour with the chopped veggies, spices and water
-stir all together,making sure the mixture isn't too thick or watery just ok,add seasoning cubes make sure you taste before adding the  salt so it wouldn't be too salty.
-Heat up a pan,add little vegetable oil  for frying.
-Heat it up,with a spoon scoop little at a time till it covers the pan.when it is golden brown at the bottom turn to the other side,continue till you are done.

FOR THE PAP
-Boil water,once its ready,mix the pap with little water,not too thick or watery,then pour the boiled water over it till it become thick.stir with a spoon to avoid lumps.serve with milk,honey or sugar accompanied with the akara.

And that's my method of preparing akara(bean cake) It can be eaten with pap,bread or even garri.i had mine with pap and kenyen farms pure honey,it was delicious.

YAMARITA(EGG COATED YAM FRIES)WITH PEPPERED SAUCE

Happy weekend guys😆

How's your weekend going?well I just got back from a wedding,I am tired but have to share this recipe,I  have always wanted to make this but kept procastinating🙈i made it this morning for the family with peppered sauce.it was delicious and they loved it.Yamarita is egg coated yam fries.




INGREDIENTS
-5 to 10 slice of yam or more
-1 egg
-2-3teaeaspoons all purpose flour
-1 teaspoon curry powder
-1 teaspoon tumeric powder(optional)
-I teaspoon thyme
-Cameroon pepper or fresh
-seasoning cubes
-salt

PREPARATION
-boil the yam with salt till it is soft but not too soft,if a fork can go through it then it's ready.
-get a bowl,add the flour,curry,tumeric,thyme,pepper,seasoning cubes and salt,mix all together,break the egg and add to the mixture,mix all together.
-Get the yam slices coat with the mixture and deep fry in hot vegetable oil till it is golden brown.I prefer this method because in minute it is ready.
-or you can make the flour and egg mixture separately,season the flour with all the spice,set aside.break the eggs and season with salt and curry powder.mix the yam slice in the egg mixture then coat with the flour and deep fry till golden brown.
-serve hot.

This can serve as breakfast or snack.
For the sauce,I made a little twist,I added cabbage and green pepper.

GOAT MEAT VEGETABLE SAUCE

Today I will be sharing a simple and healthy sauce recipe,I am obsessed with veggies and can add it to any meal.goat meat vegetable sauce is on the menu today,let get cooking....


INGREDIENTS 
-Goat meat
-Fresh pepper(chopped)
-Tomatoes(chopped)
-Onion(chopped)
-pumpkin leaves(ugu)(chopped)
-vegetable or palm oil(I used vegetable oil)
-seasoning cubes
-Salt

PREPARATION 
-wash the goat meat and cut in smaller piece.
-place in a pot,add chopped onion,seasoning cubes,salt and enough water to boil it.make sure it is properly cooked and tender.
-when the goat meat is ready,get a pan add little vegetable oil,heat a bit,add the chopped onion then the pepper and tomatoes stir and leave to cook till the tomatoes melt,add the goat meat with little stock.
-Add more seasoning if necessary,cover the pan and leave to cook for 5 minute.
-Then add the pumpkin leaves stir and leave for another two minutes.
-The sauce is ready to be served.

Serve with white rice,boiled yam or plantain.

EGG BREAD TOAST/EGG SANDWICH

I will be sharing a simple breakfast recipe.
It's healthy and easy to prepare





INGREDIENTS
-2 or more slice of bread
-2 or more eggs
-Green bell pepper
-fresh pepper 
-onion
-tumeric powder
-cinammon powder
-curry powder
-seasoning cubes 
-salt

PREPARATION
-break the eggs and add to the chopped veggies in a bowl.
-add tumeric,cinammon,curry,seasoning cubes and salt,stir all together.
-get a clean pan,add little vegetable oil leave to heat up a bit,get a slice of bread,dip into the egg mixture and place in the hot pan,pour the egg mixture on the bread,leave to cook very well on one side then flip the other side and do the same.
-serve hot with your favourite drink or tea.

BOILED YAM WITH VEGETABLE EGG SAUCE

On our menu today is this healthy egg sauce,delicious and easy to make.
I am a veggie freak and proud.

Eat alot of veggies,what one eats affects the skin.my advice try to eat at least one vegetable a day,that's what I have been doing for years now and it has really helped.let get cooking.....

INGREDIENTS
-eggs
-Carrots(chopped)
-Green beans(chopped)
-Green pepper(chopped)
-Fresh pepper(chopped)
-Onion(chopped)
-tumeric powder(optional)
-curry powder
-seasoning cubes
-salt

PREPARATION 
-Get a clean dry pan,add little vegetable oil,heat it up a bit,add all the veggies starting with the onion,leave to cook for 5 minute.
-Add the tumeric,curry and seasoning cubes  stir all together,leave for another 2 minute,while that is on,get your eggs,break and whisk with a little salt.
-Add it to the veggies and mix all together till it's ready.That's it guys,
