UKODO(YAM AND PLANTAIN PEPPER SOUP)

Ukodo is a yam and unripe plantain pepper soup dish of the Urhobo people from the Delta region of Nigeria,it is mostly served at occasions as a special delicacy.



As a correct Delta girl,I love this dish alot.During the festive season we bought two goats,after sharing and entertaining guest some where still remaining in the freezer.

So when the opportunity of participating in a cooking competition came I decided to prepare ukodo with the remaining goat meat,it was an online competition i am still waiting for results,please add me in your prayers so i can win,the cash prize is huge.




This dish is mouth watering and very delicious if prepared well.people are already used to the normal yam and pepper soup but alot don't know the combination of both,this takes yam and pepper soup to another level.


INGREDIENTS
-Goat meat
-Yam(peel,wash and cut in cubes)
-Unripe plantain(peel,wash and cut in cubes)
-Red pepper(blended)/blended dried pepper can also be used.
-Onion(chopped)
-Erhe(calabash nutmeg/urheri(grain of selim)blend small quantity or already made pepper soup.
-Lemon grass(washed)
-Scent leaves(washed)
-Potash(a little)
-Seasoning cubes
-Salt



Spices and how they are used
-Erhe(calabash nutmeg)consist of the skin and seed,part used the seed.

-Urheri(grain of selim)consist of the seed and skin,part used both.

PREPARATION
-Wash and cut the goat meat to smaller sizes.

-Boil with lemon grass,scent leaves,onion,seasoning cubes and salt till it's soft.

-Add pepper,pepper soup spices,plantain and yam cubes cover to boil,when it's almost ready add little potash,taste for salt and seasoning cubes,add again if necessary.

-Remove the lemon grass from the soup.

-To thicken the soup a bit,take out a piece of yam mash then add it to the soup,leave for two minutes.

-Your ukodo is ready.
