YAM PORRIDGE

Hi everyone

On our menu today is yam porridge,i know its not new to you all but this particular recipe is different from what you all are used to.I love my porridge thick and not watery,in other to achieve that you have to chop some of the yam into smaller cubes so it will be easy to mash a bit but if you refer yours watery then skip this part.

Yam porridge is a very quick meal to make in less than an hour and very tasty too.
Let's get cooking.........




INGREDIENTS
-Yam
-1 Smoked or fresh marckcrel fish
-Crayfish
-1/2 green bell pepper
-3 red pepper
-2 fresh tomatoes
-1 onion
-A cooking spoon of Palm oil
-Ugu leaves
-2 seasoning cubes(i used the new naija pot maggie cubes,it gives the porridge a nice taste but any seasoning cube is fine)
-Salt to taste.

Note-this quantity was for 3 serving,you can increase for more people.



PREPARATION
-wash and roughly blend the tomatoes,pepper,onion,green pepper,crayfish and set aside.

-Wash the ugu leaves with water and salt to remove dirts and finely chop in shreds.

-Peel the yam,chop in small cubes,wash and place in a pot,add water enough to cover the yam bring to a boil,add salt,seasoning cubes,Palm oil and tomatoes blend,cook for 5minutes then add the smoked or fresh marckcrel fish.cook till its ready,then add the ugu leaves,let it simmer for 2 minute.

-Your delicious yam porridge is ready.
